Emily Scott Rosemary & Sea Salt Sourdough Crackers pairing

Life is sweet, soft figs with notes of thyme and honey with goat’s cheese is so good. Baked in the oven and then spooned onto Rosemary & Sea Salt Sourdough Crackers. Irresistibly moorish.

Ingredients

Peter’s Yard Rosemary & Sea Salt  Crackers x 1 box (90g)
4 x figs (ripe) cut into quarters
100g Goat’s cheese
1 tbsp honey
1 small bunch thyme (thyme leaves only, keep extra for garnish))
1 tbsp good olive oil
Cornish seasalt, freshly ground pepper
Preheat the oven to 180’C

Method

Place figs onto a tray lined with baking parchment. Drizzle figs with honey and olive oil.

Season with sea salt and pepper and scatter over thymes leaves.

Slice the goat’s cheese into pieces and place on top of each quarter
of fig.

Bake in the oven for 5-7 minutes until slightly caramelized and the cheese has melted.

Spoon onto the rosemary and sea salt sourdough crackers.

Garnish with extra thyme leaves. Serve immediately.

Cook’s note – Goat’s cheese can be swapped out for another soft cheese of your choice.
