INGREDIENTS:

250g wheel of Camembert
1 tablespoon sugar
a pinch of salt
Peters Yard Fig and Spelt Sourdough Crackers, for serving

METHOD:

Preheat your oven to 180°C . Unwrap the wheel of Camembert and place it in a suitable baking dish. Slide the dish into the preheated oven and bake the cheese for approximately 10 minutes. This gentle warmth will soften the cheese and prepare it for the delightful caramelisation to come.

After the initial baking, remove the cheese from the oven and, if you prefer grilling, switch your oven to the grill setting. Alternatively, for a more dramatic effect, you can use a cooking torch to caramelise the sugar. I will guide you through both methods!

Sprinkle the top of the Camembert with the sugar, evenly coating the surface. Add a pinch of salt over the sugar, creating an exquisite balance of sweet and savoury that will elevate the flavour profile.

Return the cheese to the oven under the grill setting. Watch closely as the sugar begins to caramelise and develop beautiful golden spots. This process should only take a few minutes, so stay attentive to achieve the perfect level of caramelisation. If you’ve chosen to use a cooking torch, carefully aim the flame at the sugar-covered surface of the cheese. Move the torch in circular motions, allowing the sugar to melt and caramelise until a luscious golden crust forms.

Allow the Crème Brûlée Camembert to cool slightly before serving, as the cheese will firm up a bit as it cools.
